2. Margherita Pizza

The simplicity of this pizza is just what I was looking for and uses absolutely no sauce!  Just sliced tomatoes, fat-free mozzarella cheese, chopped basil and a bit of balsamic!  My favorite combination of ingredients all on one heaping pile of dough.  Which also tasted crazy delicious.

The great thing about the dough is that you can make it ahead of time and use whenever you’d like.  I halved the recipe since I knew I was just making one pizza and stored it in the fridge for about 2 1/2 days til I made it.  It was super easy to make and was fun to shape!I do want to invest, however, in a nice pizza stone because I think my pizza would have come out a million times better, but for now this works.  The great thing about this is you can make any type of pizza you want!  The possibilities are endless!  I just happen to be the pickiest eater known to man so I kept it simple. 3. Lighter Chicken Enchiladas

I came across this version that uses a light, broth-based, smoky chipotle sauce. I was immediately intrigued. The sauce is super simple to make, and that’s pretty much all there is to this: sauce-making and assembly. If you think enchiladas are too complicated to make on a weeknight, I’m about to prove you wrong. Deal with it.

Start with cooked chicken, grilled or poached, and shred. Make the sauce. Easy. Add some sauce to chicken, and fill tortillas with this mixture. Place in baking dish. Top with sauce and cheese. Broil until melty and crispy-edged. DONE. And not only is it easy, but it’s also lightened up. We’re making huge nutritional changes by using our homemade sauce, plus light whole wheat tortillas and 2% cheese, but we’re not compromising on flavor. No sir! 5. Easy Chicken Fried Rice

Easy Chicken Fried Rice is so simple to make at home, and is way better, healthier and cheaper than take out!  Chicken and rice (either fresh or leftover) join kitchen staples like frozen veggies, sesame oil, egg, and gluten-free Tamari or soy sauce, for a quick dish that’s way easier on the wallet than ordering take out, and tons healthier too!
Use reduced sodium gluten-free Tamari or soy sauce to keep the salt content low, and/or swap the whole egg for just an egg white, if you please!  The egg is probably my favorite part though – it soaks up all that sesame oil flavor and is wonderfully chewy and decadent. 6. Chicken Tacos

I’ll keep this short and sweet: this is one of my all time favorite recipes. If there is one crockpot recipe you need in your repertoire, this is it. But truthfully, after making it once you won’t even need the recipe because it’s just so darn easy.
Three ingredients and almost zero work. The result is a juicy, flavorful shredded chicken that makes some killer tacos. I like to load up my tacos, so they look a bit messy in the pictures. They were like that in real life, too. Messy and delicious. I’ve been told before I have a knack for ordering the messiest foods on any menu. Why? Because the messiest foods are the best foods. 7. Healthier Oven Fried Chicken

This is an oven-frying-only recipe – you don’t need to do any stovetop frying at all. This is a nice and easy recipe that yields some really yummy finger-lickin’ good chicken that is also good for you!

Start with some good quality chicken pieces with skin and bone-in. We aren’t making chicken strips here. Thoroughly dry your chicken and coat with half the seasoning and paprika.
